I think FAQ entry 14.5 covers this well.  It hasn't been updated since
2002, but it still seems accurate.

The FAQ item name (14.5. I want to change the text being typed into an
entry or textbox, but the original text is also inserted!) isn't the
easiest way to find it, but FAQ item 14.22. "How do I create a mask or
validator for a GtkEntry?" points to 14.5.
